  • 500 grams of beef
  • 8 cups of water
  • 1 medium sized onion
  • 3 medium sized tomatoes
  • 1 medium sized carrot
  • 1 piece of celery
  • Half cabbage
  • 2-3 cloves of garlic
  • 1 tablespoon of butter
  • 2 tablespoons olive oil
  • 2 tablespoons of vinegar
  • 1-2 bay leaves
  • Salt
  • Black pepper
  • Cumin

To boil the beets:

  • 3 beets
  • Half cup grape vinegar 

To serve the soup:

  • A pinch of finely chopped dill
  • Half a cup of heavy cream

How to Make Borsch Soup?

  • First, wash the beets well under water.
  • Remove the roots and stems and peel them.
  • In a large and deep pot, boil the beets for half an hour in water with grape vinegar and salt.
  • In a different pot, put the beef cut into large pieces and let it boil in plenty of water.
  • Meanwhile, remove the softened beets from the boiling water, peel them and cut them into cubes.
  • Chop the carrot, celery and onion into the same size. 
  • Finely chop the cabbage.
  • Peel and crush the garlic.
  • Grate the tomatoes.
  • Set aside the water from the boiled beef
  • Put the butter and olive oil in a pot and heat.
  • Add the carrots, celery and onion one by one and roast them. 
  • Add the crushed garlic cloves and cook for 10 minutes.
