Ginger Pumpkin Soup

Ingredients;

•1 kg pumpkin

•1 medium size potato

•1 medium size onion

•1 ginger root

•Half a tea glass of olive oil

•4 drinking cups of hot vegetable stock

•3 tbsp of cream

•1 tsp of salt

•1 tsp of black pepper

•1 tsp ground red pepper

Instructions: Peel and slice the pumpkin, onion and potatoes into cubes. Put the olive oil into a pot and heat it on medium heat. Add the onion, potato and pumpkin and stir to sauté. After the colors of the vegetables start to change, add salt, black pepper and ground red pepper. Then add the vegetable stock you have already prepared and let it cook on high heat until it boils. After boiling, reduce the heat a little and continue cooking. After the vegetables start to soften, take the pot from the stove and puree all the ingredients using a blender. Finally, add the cream and stir until all the ingredients are mixed. Your Ginger Pumpkin Soup is ready, enjoy it!

 

Cauliflower Soup

Cauliflower, one of the root vegetables with numerous benefits, is one of the indispensable dishes in the winter. You must try making this soup at the first opportunity since it is an easy to cook, delicious and healthy soup. Here are the instructions...

Ingredients;

•1 small cauliflower

•1 medium size potato

•1 medium size onion

•2 celery stalks

•3 tbsp of olive oil

•4 drinking cups of hot beef/chicken stock

•1 tbsp of butter

•1 tbsp of flour

•1,5 drinking cups of milk

•½ tsp of salt

•½ tsp of black pepper

Instructions: Separate and cut the cauliflower into florets. Peel and cut the potatoes and onion into big pieces. Put the olive oil into a pot and let it heat on low heat. When the pot is heated, add the potatoes, onion and cauliflower. After the color of the sautéed ingredients start to change, add the stock and let it boil for 20 minutes. When the soup starts to boil, sauté the flour in butter in a separate pot. While pouring the cold milk over it slowly, stir it quickly. After the mixture thickens, take it from the stove and add it into the soup, which was left to boiling. Then stir it for a while. After adding the salt and black pepper, cook for a further 5-10 minutes and take the pot from the stove. Puree and blend the soup using a blender until smooth. Your healing cauliflower soup is ready, enjoy it!

 

Creamy Spinach Soup

Have you ever tried the spinach soup, one of the favorite winter vegetables containing vitamins C, E, B and magnesium? If you have not tried it yet, here is the recipe;

Ingredients;

•500 g baby spinach

•1 medium size onion

•4 tbsp of olive oil

•4 drinking cups of chicken stock

•2 tbsp of flour

•½  drinking cup of cream

•½ tsp of salt

•½ tsp of black pepper

Instructions: Peel and cut the onion into pieces. Then put the olive oil into a pot and heat it. When the olive oil is heated, add the onions. Wash and dry thoroughly the baby spinach. Add the spinach on the onions and sauté it for a while on medium heat. After adding the flour into the mixture, sauté for 3-4 minutes on low heat. After adding the salt and black pepper, pour over the chicken stock. Continue cooking on medium heat and stir constantly to prevent lump forming. While adding the cream into the boiling soup, whisk it quickly to prevent the cream from curdling. After cooking the soup on medium heat for about a further five minutes, turn down the stove. Finally, blend the soup until puree using a blender. Your soup is ready! You can also serve it with crouton on it.

 

Soup with Vegetable Winters

Would you like to make a soup with the healing winter vegetables, adorning our tables, with the arrival of winter? After trying the winter soup made with potato and carrot, one of the must-haves in the kitchen, as well as leeks, you will become addicted to it! Here are the instructions…

Ingredients;

•2 potatoes

•2 carrots

•2 leek stalks

•½ onion

•3 drinking cups of chicken stock (you can also beef stock)

•1 drinking cup of hot water

•1 tbsp of butter

•1 tbsp of olive oil

•2 fresh basil leaves

•1 dessert spoon of black pepper

•1 dessert spoon of salt

Instructions: Cut the leeks and onion into thin slices. Put the olive oil into a pot and let it heat. After the olive oil starts to heat, add the leeks and onion and sauté for a while. Peel and cut the carrots and potatoes into cubes. Add the potatoes and carrots in the pot, and sauté all the ingredients for a while. After adding the salt and black pepper, add hot water and let it cook on low heat for a while. Take the pot from the stove when the vegetables start to soften. Your soup is ready! You can serve it with basil leaves on it to add a different flavor. Enjoy it!
