How to Make Turkey Stuffed with Rice and Chestnuts?

Ingredients for Roasted Turkey Stuffed with Rice and Chestnuts

• 1 turkey

Ingredients to be added to boiling water:

• 3 carrots

• 2 medium-size onions

• 3-4 cloves of garlic

• 4-5 slices of orange peel

• Black peppercorns

• Dried thyme leaves

• Salt

Ingredients for the sauce to be spread on turkey:

• 1 tablespoon of red pepper paste

• Half a drinking cup of olive oil

• Half a drinking cup of yogurt

• 1 tablespoon of soy sauce

• 1 dessert spoon of dried thyme

• 3-4 cloves of garlic

• 1 dessert spoon of salt

• 1 dessert spoon of ground red pepper

• Half a teaspoon of black pepper

• Half a teaspoon of cumin

• Juice of 1 lemon

Ingredients for the sauce to be used before putting the turkey in oven:

• 1 bowl of yogurt

• 1 tablespoon of soy sauce

• 1 dessert spoon of ground red pepper

• 1 dessert spoon of thyme

• 2-3 tablespoons of tomato paste

• 1 tea glass of olive oil

• Half a teaspoon of black pepper

For Rice Stuffing:

• 6 drinking cups of Baldo rice

• Half a kilogram of chestnuts

• 2 tablespoons of raisins

• Half a teaspoon of cumin

• Half a teaspoon of allspice

• Half a teaspoon of black pepper

• Half a teaspoon of cinnamon

• 1 dessert spoon of salt

To flavor the chestnuts:

• 2 oranges

• 1 dessert spoon of sugar

• Half a teaspoon of salt

Directions for Roasted Turkey Stuffed with Rice and Chestnuts:

• Mix olive oil, tomato paste, lemon juice and yogurt in a deep bowl. Even though red pepper paste is preferred, you can also use tomato paste if red pepper paste is not available. Add the spices to the bowl and mix thoroughly.

• Use stove to singe off the small hairs on the turkey. After that, wash the turkey thoroughly.

• Put plenty of the spicy sauce with tomato paste you have prepared inside and outside the turkey.

• Set the turkey in the middle of a large tray, cover it with stretch wrap and put it in the fridge. The turkey will taste better when you do this the day before cooking. But if time is limited, then you can do this 2-3 hours before cooking.

• Cook the turkey in a pot for 1 hour before roasting in the oven. So, tie the turkey's legs together using a string, and put the turkey in a large pot. Add water enough to cover it, and let it boil.

• Preset the oven to 200 degrees 15 minutes in advance. After boiling the turkey for 1 hour, take it on a tray and put it in the preheated oven.

• Mix the ingredients of the sauce to be used before putting the turkey in the oven. Spread it all over the turkey thoroughly.

• After spreading the sauce, cover turkey tightly with aluminum foil, and reduce the oven temperature to 180.

• Roast the turkey in the oven for at least 2 hours.

• Remove the foil on the turkey in the last half hour, and let the turkey roast. Open the oven door regularly and spread the sauce on the tray over the turkey with a tablespoon. You can add the water, which you have used to boil the turkey, to the tray to prevent the turkey from drying out.

• Stuff turkey with rice and chestnuts half an hour before you take it out of the oven. Make sure that rice stuffing is not fully cooked so that it can be fully cooked inside the turkey in half an hour.  Christmas turkey is ready.

After taking the turkey out of the oven, let it rest for half an hour before serving so that it tastes as it should be. After resting, spread the sauce over the turkey and serve it.

Enjoy it and Happy New Year…
